A thick, tropical-flavored punch. You may need a whisk to mix in the coconut milk.
1/4 cup granulated sugar
3 tbsp. water
2 cans of sliced mango (with syrup), 14oz each
3 cups orange juice
14 oz. can of coconut milk
1/3 cup orange-flavored liqueur (such as Grand Marnier)
3 tbsp. yellow-colored, licorice-flavored liqueur (such as Galliano) (see Note)
12 ice cubes
Serves 16
Combine sugar and water in small saucepan.
Bring to a boil on medium-high.
Boil, uncovered, for about 1 minute until slightly thickened and sugar is dissolved.
Remove from heat.
Cool.
Chop portion of mango into 1/4" pieces to fill 1 cup measure.
Set aside.
Process remaining mango with syrup in blender until smooth.
Measure next 4 ingredients int small punch bowl.
Add processed mango, chopped mango and sugar mixture.
Stir.
Add ice cubes.
Makes about 9 cups.
Note:
If you cannot find Galliano, add several drops of yello food coloring to same amount of clear licorice-flavored liqueur (such as Sambuca) until desired shade is reached.
Variation (without alcohol):
Omit liqueurs.
Use same amount of orange juice.
Serving Suggestion:
Use mandarin-mint ice cubes (Minted Citrus Punch) for a special touch.
If you prefer a less thick punch, add lemon lime soft drink or club soda until desired consistency.
