  • 4 Halibut steaks
  • salt, pepper and basil to taste
  • 2 cloves garlic minced
  • mayonnaise
  • grated parmesan cheese
  • paprika
MMMMMMMMMMMMM! I made this recipe with Tilapia. Both my husband and I loved it! I did add lemon juice to the recipe (squeezed half a fresh lemon) The recipe doesn't tell you to do this, but I would mix the mayo, lemon juice and garlic all at once and then spread it on the fish and then sprinkle with paprika and finally sprinkle on the cheese (I um...used more cheese than it called for). It came out nice and crispy and completely satisfying. This is a perfect recipe for someone who doesn't necessarily like fish all that much. I have another recipe similar to this one that I'll post the recipe.

Quinoa

Prep Time: 2 minutes
Cook Time: 30 minutes

Ingredients:
  • Chicken or vegetable broth
  • Quinoa
  • clove garlic
  • pinch of salt
The book states, "Quinoa (keen-wah) was the staple food of the Incas for more than 5,000 years. An excellent source of iron, magnesium and potassium, it contains complex carbohydrates and high quality protein." It's for this reason I have switched anything I prepared with rice to quinoa. At first I did not like the texture, and I'll post later a recipe that was good to try if it's your first taste. I would not recommend this as a first time tasting. It was very plain and the flavor of the garlic did not really come out. The coking time was spot on though and the quinoa came out nice and fluffy. I'm a big fan of this trendy new grain and it makes you full and keeps you satisfied for a long time.
