We're having a family dinner and my grandmother has requested that I make chicken cacciatore. The only problem is I've never made it before. Does anyone out there have a GREAT recipe that they've actually made, and if possible made more than once, so you know it's good.Thanks for the help.
 
Serves 4 people.1 large chicken, cut into 8 portions, or 4 separate chicken pieces1 large onion, chopped1 stick of celery, sliced1 carrot, sliced2 bell peppers2-3 cloves of garlic, crushed1 tin ( 400g - 14oz ) of chopped tomatoes or same amount fresh tomatoes1 large glass of dry white wine1 large tablespoon of olive oil1 level tablespoon or less of all-purpose floura few basil leaves, torn small fry the chicken pieces brown on all sides in the olive oil in a shallow pan remove from pan and put aside fry the onion gently until light brown add the carrot, celery and garlic add the bell pepper and fry for a 1-2 minutes pour over the wine and stir add the tomatoes, basil and salt and pepper now return the chicken pieces, first the thighs and legscover and simmer for 5 minutes then add the breast and wings cover and simmer gently for 35 minutes stir in the flour to thicken sauce and simmer for at least 1 minute, stirring all the time to prevent from sticking can be served either with rice or short pasta Buon appetito!

Simple, easyCrockpot Chicken CacciatoreINGREDIENTS:1 lg. onion, thinly sliced3 lbs. cut up chicken2 (6 oz.) cans tomato paste4 oz. sliced mushrooms1 tsp. salt1 to 2 cloves garlic, minced1 to 2 tsp. oregano1/2 tsp. celery seed1 bay leaf1/2 c. waterPREP:place onions in bottom of Crock Pot. Add chicken pieces. Stir together remaining ingredients. Pour over chicken. Cook on low 7 to 8 hours; high 3 to 4 hours. Serve chicken cacciatore with hot cooked spaghetti.

Chicken CacciatoreINGREDIENTS: * 1 broiler chicken, cut up, or about 2 1/2 3 pounds chicken parts * pepper * 1/4 cup olive oil * 1/2 cup sliced onion * 1/2 cup chopped celery * 1 large clove garlic, minced * 1 cup ketchup * 1 cup water * 2 tablespoons chopped fresh parsley * 1 bay leaf * 1/2 teaspoon salt * 2 tablespoons red wine * hot cooked spaghettiPREPARATION:Directions for chicken cacciatoreSprinkle chicken with pepper; cook chicken parts, turning to brown both sides, in a large skillet in hot olive oil. Remove chicken. To the same skillet, add onion, celery, and garlic; sauté until tender and onion is lightly browned.Stir in ketchup, water, parsley, bay leaf, 1/2 teaspoon salt, and red wine. Add chicken to the skillet. Simmer, uncovered, for about 30 minutes, or until chicken cacciatore is tender. Serve chicken cacciatore over spaghetti with some of the sauce. Chicken cacciatore recipe serves 4 to 6.
