Spicy Thai Chowder with Shrimp

6 oz rice stick noodles (thin)
3 green onions (shallots)
1 good stalk of lemongrass
2 tbsp vegetable oil
2 cloves of garlic, crushed and chopped
1 1/2 tbsp grated ginger
1/2 red or green thai paste or crushed red pepper flakes
7 cups chicken stock
3 tbsp fish sauce
2 cups assorted mushrooms
1 1/2 peeled tail on shrimp (size 8-10 or smaller )(uncooked)
3 tbsp lime juice
1 1/2 cup unsweetened coconut milk
4-5 coriander sprigs
Place the noodles in a large bowl, cover completly with boiling water, let this soak while you make your soup.
Thinly slice green onion (shallots) and put the chopped greens to one side and the white on another. Using a mallet or something really heavy in your kitchen (bottom of
a pot) and lightly crush the bottom white bulbs of your lemongrass.
In a large pot heat oil over medium heat and toss in the garlic , white part of onions , ginger, and curry paste (and or other) Cook until fragrant 5-10 minutes.
Stir in stock, fish sauce and lemongrass, make sure lemongrass is submerged.
Bring to a boil, then simmer for 25 minutes. Remove from heat and discard lemongrass.
Drain noodles then add to soup along with onion greens, mushrooms, shrimp, and lime juice. When shrimp turn pink , stir in coconut milk, add coriander leaves on top, serve into bowls.
