CHOCOLATE ZUCCHINI CAKE2 cups all-purpose flour 2 cups white sugar 3/4 cup unsweetened cocoa powder 2 teaspoons baking soda 1 teaspoon baking powder 1/2 teaspoon salt 1 teaspoon ground cinnamon 4 eggs 1-1/2 cups vegetable oil 3 cups grated zucchini 3/4 cup chopped walnutsPreheat oven to 350 F. Grease and flour a 9x13 inch baking pan. In a medium bowl, stir together the flour, sugar, cocoa, baking soda, baking powder, salt and cinnamon. Add the eggs and oil, mix well. Fold in the nuts and zucchini. Pour into the prepared pan and bake for 50 to 60 minutes, or until a knife inserted into the center comes out clean. Cool cake completely before frosting with your favorite frosting Or use following recipe for this rich Chocolate Fudge Frosting.Chocolate Fudge Frosting1/2 cup butter 3 (1 ounce) squares unsweetened chocolate 1 pound confectioners' sugar 1/2 teaspoon vanilla extract 3/4 cup milk Melt chocolate and butter in the microwave, or in the top of a double boiler. In a large bowl, combine confectioners' sugar, vanilla and 1/2 cup of the milk. Blend in the melted chocolate mixture. Add remaining milk, a little at a time, until desired consistency is achieved. Let stand until frosting. (The frosting will thicken as it cools). When frosting is at the consistency you desire, frost the cake and let sit a few minutes for the frosting to set.
