Recipe Feeder
1 medium avocado
juice of one lemon (about 2 tbsp), divided
1 tsp. salt
1 small (3¼ oz.) can ripe olives, drained & quartered
2 cups chopped celery
2 cups diced cooked chicken
1/2 cup mayonnaise
lettuce as needed

Dice the avocado & sprinkle it with half the lemon juice & the salt.

Combine avocado, olives, celery & chicken.

Add remaining lemon juice to mayonnaise and blend until smooth.

Add dressing to chicken mixture; toss gently to coat.

Refrigerate until ready to serve.

Serve on bed of fresh greens.
 
Make a salad. Saute your chicken in a little olive oil, Cajun seasoning, or taco seasoning. Cool and cut into strips or chunks. Pit the avocado and add to top OR here's an easy guacamole recipe: 2 avocados, halved, pitted, peeled and mashed
6 tablespoons finely chopped white onion
1 jalapeno chile, seeded and finely chopped
1 clove garlic, minced
1 large ripe tomato, finely chopped
1/4 cup fresh cilantro, finely chopped
1 tablespoon lemon juice
sea salt
Add all ingredients to mashed avocado. Serve with tortilla chips.
***(If you do not have all the ingredients for the guacamole, I have pured in a little chunky salsa with lemon or lime juice. Stir. Not as good, but it will do!)
